· 1 cup unsweetened coconut (shredded or flaked)
· ¾ c natural nut butter of your choice (Almond was used for this recipe, but cashew butter is also great.
· 2TBS melted butter
· 4 drops vanilla liquid sweetener
· nonstick cooking spray
1. Spray cookie sheet with nonstick spray.
2. In a bowl, mix all ingredients thoroughly.
3. Spoon mix by the tablespoon onto cookie sheet, spaced a few inches apart.
4. Place in refrigerator for 20 minutes, or freezer for 5-10 minutes.
